swingy coat

I found this recently: http://www.toast.co.uk/imagegallery2.aspx?productid=C5N8J and would like to make something similar. (Not only because me and the coat share the name and favourite colour, lol) Most of the coats I found were a bit more structured. I would also like to add a hood that I could perhaps take off when it's not needed. Have you ever come across something like that? I would be grateful.
